We met over a decade ago in South Florida, sweating through high-concept hospitality projects at the Hard Rock Hotel & Casino. One chef, one drink guy—bonded by ambition, taste, and an unhealthy obsession with getting the details right. Since then, we’ve both married amazing Canadian women (way out of our leagues), put down roots up north

We met over a decade ago in South Florida, sweating through high-concept hospitality projects at the Hard Rock Hotel & Casino. One chef, one drink guy—bonded by ambition, taste, and an unhealthy obsession with getting the details right. Since then, we’ve both married amazing Canadian women (way out of our leagues), put down roots up north, and kept the creative fire going—building brands, raising kids, and occasionally sleeping.


Derek brings the heat in the kitchen, with years of fine dining experience and zero tolerance for bland. Jared knows how to set the mood—through bar design, storytelling, and a cocktail or two that might make you emotional.


We came together to create Nadare Kakigori—a Japanese shaved ice concept that’s light, bold, and built for hot summer days (and cooler moments worth remembering). After a string of successful pop-ups, we’re now proud to call the Distillery District our summer home. We’re here to make things that taste good, look good, and leave a lasting impression.

With over 20 years of experience in the restaurant industry, a decade of which specializing in elevated Japanese cuisine, Chef Derek’s

With over 20 years of experience in the restaurant industry, a decade of which specializing in elevated Japanese cuisine, Chef Derek’s career has been marked by collaborations with Michelin-starred and James Beard Award- winning chefs, showcasing his commitment to excellence and innovation.


Derek has led culinary operations at prestigious establishments across the globe, including Hollywood and Miami, Florida; the Bahamas; Las Vegas; Atlantic City; Houston; San Diego; San Francisco; the Middle East, and currently Toronto. Over the past five years, Derek has played pivotal roles in launching iconic venues, serving as the opening head chef at Nobu Toronto and leading the culinary vision for Canada’s first 1 Hotel in Toronto. Known for his dedication to quality, culture, and creativity, Chef Derek continues to leave a profound impact on the global dining landscape.

His award-winning cocktail expertise has taken him from New York to Toronto, shaping innovative beverage programs, training future bartenders, and representing some of the world’s most prestigious spirits brands. A decorated competitor, Boller has claimed top honors in numerous cocktail competitions, while his work has been featured in USA Today, Denver Magazine, Bar & Nightlife Magazine, and more.


As a consultant, he has designed high-profile bar programs for luxury hotels, renowned restaurants, and global spirits companies. Passionate about the artistry and history of cocktails, he continues to educate and inspire, one perfectly crafted drink at a time.
